Why gentian tastes the way it does

The bitter mountain root behind our first tonic.

Gentian is a mountain flower with a very bitter root. For centuries it has been the backbone of aperitifs and bitters.

A good kind of bitter

We use a small amount of the root in No.01. It does not make the drink harsh. It gives it length, so every sip finishes clean instead of sweet.

Try a sip on its own, then with a squeeze of yuzu peel, and notice how the bitterness lifts the citrus.
